Christmas is HERE! I might seem like I have it all together in lieu of Christmas… but really I don’t. Example: I’ve had my Christmas tree up since before Thanksgiving, Christmas presents purchased, decorations up…. yet I have no wrapped one single Christmas present 😳 whoopsie. Ok that’s not entirely true… I wrapped 4 last night. 4 down, 400 to go. That might be an exaggeration. But that’s what it feels like! All that to say, if you feel like you’re behind on your Christmas “to do” list, don’t fret! We all have things we haven’t done just yet. And you know what? We’ll get them done! One thing you absolutely positively have to get done? Making cookies for Santa! And I know FOR A FACT he loves red velvet😍

We can’t forget to leave Santa cookies! It’s very important! Now, I’m not trying to tell Santa how to live his life but he might want a healthy cookie here and there. Enter my paleo red velvet cookies! They are such a delight. Andddd the best part is they are kid approved! Not every single recipe I post is kid approved for various reasons (spicy or too grown up), but you bet your bottom dollar these cookies are. Colin actually climbed on the kitchen table to get one the other day😳 You better believe our Elf saw him!

Does your family do Elf on the Shelf? I was hesitant BUT my precious husband really wanted to so I said ok. Colin decided to name him “Uh-Oh” and loves searching for him each morning. Colin is really starting to understand Christmas, Santa, Jesus, and presents this year and it’s completely magical to watch. The candlelight Christmas Eve service should be interesting. Hopefully he doesn’t burn the place down and just sits quietly in mommy’s lap… HA! I think we all know an 18 month old little boy isn’t going to do that! But hopefully he will enjoy the music and at least sit with one of our family members… wishful thinking!

If you need these to be dairy free, just sub ghee and make sure the chocolate you are using is dairy free as well. I love the brand Enjoy Life for allergen friendly foods. You can find them at Kroger and Walmart too, I think. You're going to love these cookies as much as Santa and your kids. I won’t tell if you eat 7 of them on Christmas, either. Solidarity. Red Velvet Cookies

Red Velvet Cookies

Yield: 2 dozen cookies

ingredients:

Wet ingredients
  • 1c chocolate chips
  • 1T + 1 stick butter, softened and separated
  • 1/2c coconut sugar
  • 1t vanilla extract
  • 3t red food coloring (or the whole bottle)
  • 2T vanilla almond milk
  • 2 eggs
Dry Ingredients
  • 1.5c almond flour
  • 1/2c coconut flour
  • 1t baking soda
  • 1/4c cacao powder
  • Pinch sea salt
  • 1c white chocolate chips
  • Organic confectioners sugar, for dusting

instructions:

How to cook Red Velvet Cookies

  1. Preheat oven to 350F.
  2. Melt 1 cup chocolate chips + 1T butter in a double boiler or the microwave on 30 second intervals (stirring between each interval) until smooth and melted. Set aside and let cool.
  3. Cream butter and sugar (easiest in a standing mixer) and drizzle in melted cooled chocolate while on low. Add remaining wet ingredients and mix well.
  4. In a separate bowl mix dry ingredients except white chocolate chips.
  5. With mixer on low, add dry ingredients and mix until well combined.
  6. Fold in white chocolate chips.
  7. Scoop cookies onto a parchment lined baking sheet and top with a sprinkle of confectioners sugar.
  8. Bake for 13 minutes. Let cool completely before serving.
