I love chicken salad, you love chicken salad. Let’s be honest- we all love chicken salad. And for a good reason! It’s quick, it’s easy, it’s delicious. Meal preppers love it because you can make a huge batch and eat on it for a week. It’s basically the perfect lunch option. And I love coming up with new chicken salad recipes for y’all!

The magic of this chicken salad lives in the ease of the recipe. All you have to remember is ONE. One of everything and you’re good to go. You’ll see what I mean in the recipe below. If you think you’re a bad cook (you aren’t!), try making this and you will feel like a culinary rockstar! Dump it in a casserole dish and eat it in a wrap, with crackers, as a sandwich, inside an avocado, with eggs, on top of a salad, with carrot sticks…. the options are endless!

The second magic to this chicken salad is using my homemade mayo recipe that I shared last week. You can absolutely use jarred mayo- any kind you like! But homemade mayo is SO GOOD, you won’t ever turn back once you’ve made it. It gives such a delicious creaminess to the chicken salad. You’re going to love it!

ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1c chopped celery
  • 1c diced apple (one small apple)
  • 1c chopped grapes
  • 1c mayonnaise
  • 1t garlic powder
  • 1t dried minced onion
  • 1t salt

How to cook 1-1-1 Chicken Salad

  1. Add all ingredients to a bowl and stir until well mixed. Store in an airtight container in the fridge for 5 days. Enjoy with crackers, in a sandwich, in a wrap, on an avocado, etc.
